Eat Dessert First!

This month, the Red Hat Society has been all about our motto of eating dessert first! In our weekly publication, The Friday Broadcast, we have asked Hatters to share with us some recipes that they love, and they have really given us some great ideas!

Here are a few of the recipes they have shared with us!

Pineapple Cake

“My favorite cake is a Pineapple Cake, which is so simple and easy to make that it is almost unbelievable." 

What you need: 
One box of Angel Food Cake Mix
One can crushed pineapple
Cool Whip (Optional)

Directions:
Preheat the oven to 350°
Make the cake mix according to the box instructions. Add the pineapple, mix well and bake in sheet cake pan for appox. 30 min. Top with Cool Whip if desired.” 

Cinnamon Cream Cheese Squares

What you need:  
2 Packages crescent rolls (I use reduced fat) 
Filling: 
2 8-ounce packages of cream cheese, softened (I use non fat or low fat)
1 1/4 teaspoon vanilla 
1 cup sugar (I sometimes use the Splenda baking blend)
1 egg yolk (save the white)

Topping: 
1 egg white
Cinnamon sugar - mix 1/2 cup sugar with 1 teaspoon cinnamon

Directions:
Preheat oven at 350°
Unroll one package of crescent rolls into bottom of greased 9 x 13 baking dish (metal or glass). Be sure to press the edges together. Use a mixer to combine cream cheese, sugar, vanilla, and egg yolk. Spread mixture over crescent rolls. Roll out the second package of crescent rolls over the cream cheese mixture. Beat the egg white and spread over the top. Then sprinkle with the cinnamon sugar mixture. Bake for 30 minutes. Cool in refrigerator before cutting into squares. (I’ve been told that these are also good served warm.) I keep them refrigerated because of the cream cheese. These also freeze well. 

Makes 24 2”x2” squares.
